In Indonesia, Liberica coffee, also known as Coffea liberica, holds a distinctive presence within the country's rich coffee landscape. Liberica is a unique coffee variety characterized by its large, asymmetrical beans and a flavor profile that stands apart from more commonly known varieties like Arabica and Robusta. The Liberica plants thrive in warmer temperatures and lower altitudes, making them well-suited to specific regions in Indonesia.
Reza's Liberica coffee undergoes a distinctive processing method that sets them apart. Employing yeast strains sourced from local starters, the beans undergo fermentation in an anaerobic environment, contributing to the development of unique and complex flavor profiles. The beans are then meticulously dried as red honey, retaining 50% of the mucilage, an important element that enhances the coffee's sweetness and depth.
