To kickstart this transformative process, Reza introduces a meticulously nurtured local yeast starter, cultivated from the region's rich ecosystem in an anaerobic environment. The cherries are then carefully de-pulped with the mucilage still intact and then sun-dried, resulting in a coffee that boasts a harmonious balance of sweetness and complexity.
