Nestled in the lush and picturesque region of Ciwidey in West Java, Indonesia, Gravfarm Sukaratu stands as a charming and thriving coffee farm. Embracing a rich heritage of coffee cultivation and fueled by a passion for quality, this family-owned plantation has become a beacon for coffee enthusiasts and nature lovers alike.
Managed by husband and wife, Yugian and Lucy, Gravfarm is an active member of the forest farmer groups and give training to farmers through regular counseling on forestry, agriculture, waste management, coffee seeding, cultivation, and processing.
The husband and wife, Lucy Tedjasukmana and Yugian Leonardy, are synonymous with us at Kopi Fabriek Indonesia. There are few people in the industry with such an encyclopedic mind, so it was a total joy to be able to exchange thoughts and start working together, not just to promote coffee from West Java, but also to promote Indonesian coffee to be pushed out of obscurity. It was such a grand tour when we first visited the farm and the processing facility, sharing knowledge on botany, coffee processing, and agriculture.
The farm really held high gender equality, with women being represented in the coffee industry. Almost 70% of its farm members are women empowered, with dedication towards coffee and the industry.
Both are passionate and environmentally conscious coffee entrepreneurs like them who will have a great impact on the industry, uplifting the environment with zero waste management throughout their production process, all the way from picking cherries to water waste and everything in between.
Most of all, they both are great coffee educators on all things agriculture, post-harvest processing, sustainable coffee farming, and waste management. Grav Farm has been crowned 19th place in the 2021 Indonesia Cup of Excellence and as this booklet was written, they are currently in the final round of the 2022 Indonesia's cup of excellence.
The collaboration between Gravfarm Sukaratu and Us Kopi Fabriek has resulted in the creation of this private lot of Black Honey processed coffee. Black Honey processing is a specialized and unique method of coffee processing that involves removing the outer skin (husk) from the coffee cherries, leaving behind some of the mucilage (sticky fruit layer) to dry on the beans. This process requires meticulous care and attention, as the level of mucilage left on the beans can significantly influence the final flavor profile of the coffee. The name "Black Honey" comes from the dark, sticky appearance of the beans during drying.The Black Honey process strikes a balance between the more well-known White Honey (less mucilage) and Red Honey (more mucilage) processes. It requires precise timing and expertise to ensure the beans dry consistently and achieve the desired flavor complexity.
